Rustic No-Knead Rosemary Garlic Bread

  • 3 cups all-purpose flour
  • 3 cloves garlic, minced
  • 1 tbsp finely chopped fresh rosemary (or more, to taste)
  • 1¼ tsp kosher salt
  • ¾ tsp freshly ground black pepper
  • ½ tsp instant yeast
  • 1½ cups water, at room temperature
  • 2 tbsp cornmeal (for dusting)
  • Olive oil (for drizzling, optional)
  • Grated Parmesan cheese (optional)

1. Prepare the Dough:

  • In a large bowl, mix the flour, minced garlic, rosemary, salt, pepper, and yeast.
  • Add water and stir with a wooden spoon or your hands until a sticky dough forms (about 30 seconds).
  • Cover the bowl tightly with plastic wrap and let it rest at room temperature for 18–24 hours (until the surface is bubbly).

2. Shape & Second Rise:

  • Lightly oil a 10-inch cast iron skillet (or coat with nonstick spray) and sprinkle with cornmeal.
  • Transfer the dough to a lightly floured surface and gently shape it into a round loaf.
  • Place the dough in the skillet, cover with a clean towel, and let it rise for 2 hours (until doubled in size).

3. Bake in the Oven:

  • Preheat oven to 450°F (230°C).
  • Bake the bread for 30–40 minutes until golden brown.
  • Let cool slightly before slicing.

OR Air Fryer Method:

  • Preheat air fryer to 375°F (190°C).
  • Shape the dough into a round or oblong loaf and place it on parchment paper in the air fryer basket.
  • Drizzle with olive oil and sprinkle with extra garlic, rosemary, or Parmesan (if using).
  • Cook for 15–20 minutes, rotating halfway, until golden and hollow-sounding when tapped.
  • Let cool on a wire rack for 10–15 minutes before slicing.

Tips:

✔ Use parchment paper in the air fryer to prevent sticking.
✔ Adjust cooking time based on your air fryer model.
✔ For extra flavor, brush with garlic butter after baking.
