Description

Ingredients:
1 cooked chicken breast
, 2 carrots cooked over medium heat,
2 tablespoons cream cheese or ricotta,
2 tablespoons mayonnaise (optional for a creamier consistency),
1 clove garlic (optional)
, salt and pepper to taste,
a drizzle of olive oil or lemon juice for a special touch

Cook the chicken breast in salted and seasoned water, if desired (you can steam or boil). Steam
the carrots until very tender.
In a food processor or high-powered blender, combine the shredded chicken, diced carrots, cream cheese, mayonnaise, garlic (if using), and a drizzle of olive oil or lemon juice.
Blend until smooth.
Season with salt and pepper to taste.
Serve cold with toast, breadsticks, pita bread, or crackers.

Cook or boil the carrots until tender and crispy.
In a food processor or high-powered blender, combine the shredded chicken, shredded carrots, cream cheese, mayonnaise, air (if using), and a splash of smoke or lemon juice.
Blend until smooth and creamy.
Season with salt and pepper to taste.
I've served it cold with toast, breadsticks, pita bread, or crackers.
